COOKIES & TEA

As I had some spare time today I was wondering: how can I make my cozy evening a little bit more sweet? Cookies, chewy on the inside and crispy on the outside. That’s the first thing that popped into my head. This recipe is easy, quick and…tasty!

Ingredients:

(for about 20 cookies)

  • 2 cups of plain flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 3/4 stick melted butter
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 1 tablespoon vanilla extract
  • 1 egg
  • 1 cup coarsely chopped nuts (or chocolate chips)

Directions:

  • Preheat oven to 180 C
  • Whisk together the flour, baking soda and salt in a bowl
  • In another bowl cream together the melted butter, brown and white sugar then add the egg and mix until creamy
  • Add the sugar and butter mixture to the flour,baking soda and salt and whisk them together
  • Add the chopped nuts (or chocolate chips) and mix in until evenly distributed
  • With a spoon (or your hands if you don’t mind getting a little bit messy) form small balls and place them in a paper lined baking tray
  • Pop them into the oven and bake them at 180 C for 10-15 mins (or until they are golden brown)
  • Cool on baking sheets or wire rack

Now that they cooled down a little bit you can either dunk them in a glass of cold milk or eat them whilst sipping a cup of tea (as I like them)!
