CUPCAKE INGREDIENTS:
(for about 14-18 cupcakes)
- 2 eggs
- 3/4 cup of sugar
- 3/4 cup milk
- 1/2 cup oil (preferably sunflower oil)
- 1 1/2 cup plain flour
- 1 teaspoon baking soda
- 2 teaspoons cinnamon
- 5 tablespoons cocoa powder
DIRECTIONS:
- Preheat oven to 180 C
- Add the eggs and the sugar and mix until creamy, then mix with milk and oil
- Add in the flour, baking soda, cinnamon and cocoa powder and mix them until full incorporated
- Spoon the mixture into a lined cupcake tin
- Bake for 15-20 minutes (use a toothpick to test)
ICING INGREDIENTS:
- 1 pint heavy cream
- 1 cup sifted icing sugar
- 1 teaspoon vanilla
DIRECTIONS:
- Beat the cream until frothy
- Add the icing sugar and vanilla while gradually beating and whip until the consistency is thick enough to spread as an icing
- Use a piping bag for the icing and then top with a small sprinkle of cocoa powder

These look delicious! Question though. I usually replace my oil with applesauce. Can that be done with these?
