(for about 14-18 cupcakes)

  • 2 eggs
  • 3/4 cup of sugar
  • 3/4 cup milk
  • 1/2 cup oil (preferably sunflower oil)
  • 1 1/2 cup plain flour
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 5 tablespoons cocoa powder


  • Preheat oven to 180 C
  • Add the eggs and the sugar and mix until creamy, then mix with milk and oil
  • Add in the flour, baking soda, cinnamon and cocoa powder and mix them until full incorporated
  • Spoon the mixture into a lined cupcake tin
  • Bake for 15-20 minutes (use a toothpick to test)


  • 1 pint heavy cream
  • 1 cup sifted icing sugar
  • 1 teaspoon vanilla


  • Beat the cream until frothy
  • Add the icing sugar and vanilla while gradually beating and whip until the consistency is thick enough to spread as an icing
  • Use a piping bag for the icing and then top with a small sprinkle of cocoa powder
